Zha-Jiang Noodles

Ingredients
Ground pork2/3 lb (300g)
Dried bean curd (cut small dices)2/3 lb (300g)
Soybean (shelled)1 cup
Garlic (minced)4 clove
Shallot infused oil (or cooking oil)1/4 cup
Sweeten soybean sauce4 portion
Water1 cup
Carrot (finely julienned)1/2 lb (113g)
Persian cucumber (finely julienned)1/4 lb (113g)
Scallion (minced2 stalk
Dried noodle1 lb (450g)

Note: Except for soybeans, you also can use dried shrimps, diced zucchini, diced carrot, diced Napa cabbage, diced bamboo shoots....etc.

Instructions
1.Place shallot infused oil and ground pork in a heated wok. Sauté until the pork is loose.
2.Add garlic and the Sweeten Soybean Sauce; sauté over low heat until aromatic.
3.Put in the dried bean curds and stir over medium heat until they are colored by the sauce.
4.Add soybeans and 1 cup of water. Bring the mixture to a boil; cover and simmer for 15 minutes. This meat sauce is Zha-Jiang.
5.Cook the noodles by following the instructions on the package.
6.Place cooked noodles in a bowl; ladle Zha-Jiang over the rice and top with julienned cucumber, julienned carrot and minced scallion.

豬絞肉2/3 磅 (300克)

大蒜(切末)4
蔥油(或任何食用油)1/4
醬爆醬汁4

胡蘿蔔(切細絲)1/2 磅 (113克)
小黃瓜(切細絲)1/4 磅 (113克)
蔥(切末)2
乾麵1 磅 (450克)

註:除了毛豆,也可以加些蝦米,櫛瓜丁,胡蘿蔔丁,白菜丁,筍丁...等。

做法
1.炒鍋燒熱後放入蔥油和絞肉,用中火將絞肉炒散。
2.倒進大蒜和醬爆醬汁用小火炒香。
3.加入豆干丁用中火翻炒至豆乾都上色。
4.加入毛豆和1杯水,煮滾後轉小火加蓋燜煮15分鐘。
5.將麵依照包裝指示煮熟。
6.煮熟的麵裝碗,將適量炸醬淋在麵上,再佐以黃瓜絲,胡蘿蔔絲和蔥花。
